Ingredients
Maple Bacon:
- 3 tablespoons Grade A maple syrup
- 2 teaspoons light brown sugar
- 9 slices thick-cut bacon
Spicy Bloody Mary:
- 2 cups tomato juice
- 2 cups clam juice
- 1/2 cup freshly squeezed lemon juice
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 cup plus 2 teaspoons celery salt
- Freshly ground black pepper
- Hot sauce, to taste
- 1/2 cup vodka
- 6 cherry tomatoes
- 6 pepperoncini peppers
- 6 slices Persian cucumber
Special Equipment:
6 skewers and 6 highball glasses
Instructions:
- Preheat your oven to 325F (165C). Line a baking sheet with foil for easy cleanup.
- Combine the maple syrup and brown sugar in a small bowl. Lay the bacon slices out in a single layer on the lined baking sheet, spacing them slightly apart. Using a pastry brush, glaze the bacon with the maple syrup mixture.
- Bake the bacon for about 25 minutes until it's crisp and the sugar has caramelized. Let it cool for a few minutes before carefully peeling it off the foil. Keep it warm for garnishing.
- To make the Bloody Mary base, stir together the tomato juice, clam juice, lemon juice, Worcestershire sauce, garlic powder, onion powder, paprika, and 2 teaspoons of celery salt in a pitcher. Season with freshly ground black pepper and hot sauce to your liking.
- Once the mix is seasoned to taste, stir in the vodka and refrigerate until ready to serve.
- Before serving, spread the remaining 1/4 cup celery salt on a shallow plate. Dip the rim of each highball glass first in water, then into the celery salt to coat the edges.
- Fill glasses completely with ice and pour the Bloody Mary mixture evenly into each glass. Prepare 6 skewers by threading a cherry tomato, a pepperoncini, and a slice of cucumber onto each one.
- Garnish each drink with a skewer and a slice of the maple bacon for a smoky, sweet finish.
