Flat Apple Pie with Ideal Pie Crust

Ingredients
- 5 Granny Smith apples, peeled and sliced
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 tbsp all-purpose flour
- 1/4 tsp salt
- Juice from 1/2 lemon
- 1 batch Perfect Pie Crust (recipe below)
- 6 tbsp butter
Perfect Pie Crust (makes dough for 2 crusts)
- 3 cups all-purpose flour, plus extra for dusting
- 1 tsp salt
- 1 1/2 sticks cold butter
- 3/4 cup vegetable shortening
- 1 egg
- 5 tbsp cold water
- 1 tbsp distilled white vinegar
Instructions
1. Heat the oven to 375F.
2. In a large bowl, combine the apples, brown sugar, granulated sugar, flour, salt, and lemon juice; set aside.
3. Roll out the Perfect Pie Crust dough into large circles, starting from the center and rolling outward to an even thickness.
4. If the dough sticks, loosen it with a spatula, dust with flour, and continue rolling; always roll outward rather than back and forth.
5. Transfer the dough circles to large baking sheets.
6. Divide the apple mixture between the two crusts and fold the edges over to cover 23 inches of the filling for a rustic look. Dot the filling with pieces of butter.
7. Bake 3040 minutes or until the filling is bubbly and golden; shield the crust edges with foil if they brown too quickly.
8. Let cool slightly, then cut into wedges with a pizza cutter and enjoy.
Perfect Pie Crust Method
1. In a large bowl, mix the flour and salt. Add cold butter and shortening, and use a pastry cutter to work the fats into the flour until the mixture resembles tiny pebbles (about 34 minutes).
2. Beat the egg lightly, then add it to the dough along with the cold water and vinegar. Stir until just combined, divide the dough in half, wrap, and chill before rolling.
