Ingredients
- 1 large russet potato (If it reminds you of Mr. Potato Head, you have the right one.)
- Canola oil for coating
- Kosher salt
- Optional toppings: butter, sour cream, shredded Cheddar, and/or scallions
Directions
- Preheat your oven to 350 degrees Fahrenheit and position racks in the upper and lower thirds. Wash the potato thoroughly with a stiff brush under cold water and dry completely. Poke 8 to 12 deep holes all around the potato with a fork to allow steam to escape. Coat lightly with canola oil and sprinkle generously with kosher salt. Place the potato directly on the middle rack with a baking sheet on the lower rack to catch any drippings.
- Bake for approximately 1 hour, or until the skin turns crisp and the interior is tender. To serve, use a fork to create a dotted line down the length of the potato, then gently squeeze the ends together to pop it openbe careful of the hot steam released. Top with your favorite garnishes.
Note: If baking more than four potatoes, increase cooking time by up to 15 minutes to ensure they cook thoroughly.
