Ingredients
- 2 cups self-rising flour, with extra for dusting
- 1/4 cup shortening
- 2/3 cup buttermilk, plus more if needed
- 4 tablespoons unsalted butter, melted

Instructions
- Preheat your oven to 450F. Place a 10-inch cast-iron skillet inside to heat up.
- In a large mixing bowl, work the shortening into the flour using your hands or a pastry blender until it resembles coarse crumbs the size of large peas.
- Slowly add the buttermilk, gently mixing with your hands until a dough forms. If dry, add a splash more buttermilk. Transfer to a lightly floured surface, press into a square, fold over a few times for layers, then shape into a -inch thick rectangle. Cut biscuits with a 2- or 3-inch cutter, rerolling scraps.
- Remove hot skillet from oven, add 2 tablespoons melted butter. Arrange biscuits inside, brush tops with remaining butter.
- Bake 15 to 17 minutes until golden. Cool slightly before serving.
