Ingredients
- 1 tablespoon butter
- 1/2 cup chopped red pepper
- 2 cups frozen or canned corn, drained
- 2 cups frozen lima beans
- 1/4 cup water
- 2 tablespoons butter
- Salt and pepper, to taste
Instructions
- In a medium saucepan, melt 1 tablespoon butter and cook the chopped red pepper until softened, about 1 minute.
- Add the corn, lima beans, and 1/4 cup water; cover and let simmer.
- Cook for about 3 minutes, stirring occasionally. Stir in the remaining 2 tablespoons butter and season with salt and pepper to taste.
