Ingredients

  • 1 tablespoon butter
  • 1/2 cup chopped red pepper
  • 2 cups frozen or canned corn, drained
  • 2 cups frozen lima beans
  • 1/4 cup water
  • 2 tablespoons butter
  • Salt and pepper, to taste

Instructions

  1. In a medium saucepan, melt 1 tablespoon butter and cook the chopped red pepper until softened, about 1 minute.
  2. Add the corn, lima beans, and 1/4 cup water; cover and let simmer.
  3. Cook for about 3 minutes, stirring occasionally. Stir in the remaining 2 tablespoons butter and season with salt and pepper to taste.
