Ingredients:
- 3 pounds sweet potatoes, scrubbed clean
- Olive oil, for drizzling
- Kosher salt and freshly ground black pepper, for sprinkling
- Paprika, for sprinkling
- Garlic powder, for sprinkling

Directions:
- Preheat the oven to 450 degrees F and line a rimmed sheet pan with foil. Trim the ends off the sweet potatoes, then slice each one in half lengthwise. Cut into thick wedges, making sure all the fries are roughly the same size. Arrange the wedges on the prepared sheet pan and drizzle with a few tablespoons of olive oil. Add a generous pinch of kosher salt and plenty of freshly ground pepper. Sprinkle paprika and garlic powder to taste, then toss everything together until well coated. Roast until the bottoms are browned and crispy, about 10 to 15 minutes.
- Flip each fry, then return the pan to the oven and continue roasting until the other sides are also browned and crispy, another 10 to 15 minutes. Let cool for a few minutes before serving.
