Instructions
- In a small bowl, mix the water and gelatin together and allow it to soak for around 10 minutes (avoid stirring). At the same time, in a medium saucepan, warm the cream, vanilla bean, and sugar over medium heat until it reaches a simmer, occasionally stirring to help the sugar dissolve. Once it simmers, remove from heat and incorporate the gelatin mixture, stirring until the gelatin fully dissolves. If it takes longer than 3 minutes to dissolve completely, gently reheat the mixture until it does. Transfer the mixture into 6 to 8 ramekins or dessert cups. Refrigerate, uncovered, for 2 hours.
- Satin Chocolate Sauce: In the upper part of a double boiler, melt the two types of chocolate over simmering water. Stir continuously until fully melted, then blend in the corn syrup and hot water while keeping the boiler on the heat. Continue whisking until the sauce becomes smooth and glossy. This sauce can be prepared up to 24 hours ahead and stored in the refrigerator. To reheat, warm it gently on the stove over low heat or in the microwave.
- To present the panna cotta, briefly dip the cups into hot water for 10 seconds, then invert them onto serving plates (alternatively, serve directly in the cups). Arrange mixed berries and satin chocolate sauce around each panna cotta.
