Ingredients
- 1 1/3 to 1 1/2 pounds ground chicken breast
- 3 cloves garlic, minced
- 3 tablespoons fresh parsley, chopped
- 1/4 cup grated Parmesan (Parmigiano-Reggiano or Romano)
- 1 teaspoon fennel seeds
- 1 teaspoon coarse black pepper
- 3/4 teaspoon salt (approximate)
- 2 tablespoons extra-virgin olive oil (enough to coat the pan twice)
Instructions
- Combine the ground chicken with the minced garlic, chopped parsley, grated cheese, fennel seeds, black pepper, and salt in a bowl.
- Shape the mixture into 6 large thin patties (about 45 inches across) or 12 smaller patties (about 23 inches wide).
- Heat a large nonstick skillet and add the olive oil, turning the pan to coat.
- Cook the patties over medium to medium-high heat for 34 minutes per side, until golden brown and cooked through.
