Ingredients:
- Kosher salt
- 1 pound thin spaghetti
- 2 pounds beefsteak tomatoes (around 3 medium-sized)
- 1/4 cup extra-virgin olive oil
- 1/4 cup fresh basil leaves, chopped, plus extra for garnish
- 8 ounces Brie cheese, cut into 1/2-inch chunks
Instructions:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook following the directions on the package.
- Meanwhile, grate the tomatoes using the large holes of a box grater into a big bowl, discarding any large pieces of tomato skin. Mix in the olive oil, basil, and 2 teaspoons of salt. Fold in the Brie pieces.
- Drain the pasta, reserving 1/4 cup of the pasta water. Toss the pasta with the tomato mixture to combine thoroughly. Add reserved pasta water gradually to moisten the pasta and help the Brie soften and partially melt, if necessary.
- Sprinkle with additional basil leaves before serving.
