Arugula, Caramelized Onion, and Goat Cheese Pizza

Ingredients
- 1 tablespoon olive oil
- 1 red onion, thinly sliced
- 3 cups arugula, washed, dried, and roughly chopped
- Salt and freshly ground black pepper to taste
- 4 whole-wheat tortillas (6 inches in diameter)
- 2 ounces reduced-fat goat cheese
Instructions
- Preheat your oven to 400F (200C).
- Heat olive oil in a medium skillet over very low heat. Add the sliced red onion and cook, stirring occasionally, for approximately 15 minutes until the onions become soft and caramelize to a golden brown. Increase heat to medium, add the arugula, and saut for about 1 minute until just wilted. Season with salt and pepper to taste.
- Arrange tortillas on a baking sheet and distribute the arugula and caramelized onion mixture evenly across each one. Crumble goat cheese over the top of each tortilla and bake for 10 minutes until the cheese softens and the edges crisp slightly. Allow to cool for a minute or two, then cut each pizza into four triangular slices and serve.
