  • 6 ounces smoked ham, diced into 1/4-inch pieces (about 1 cup)
  • 1 cup grated Gruyere cheese (about 4 ounces)
  • 1 9-inch pie crust, thawed if previously frozen
  • 3 large eggs
  • 1 1/4 cups half-and-half cream
  • 1/4 cup freshly chopped chives
  • Kosher salt and ground black pepper, to taste
  • 1 tablespoon red wine vinegar
  • 2 teaspoons Dijon mustard
  • 3 tablespoons extra-virgin olive oil
  • One 5-ounce bag of mesclun greens (roughly 8 cups)
  • 4 white mushrooms, sliced paper thin

Instructions

  1. Preheat your oven to 425F (220C) with a baking sheet on the center rack. Scatter the diced ham and Gruyere evenly in the pie crust. Whisk eggs, half-and-half, chives, 1/2 teaspoon salt, and pepper in a bowl, then pour over the fillings. Bake on the hot sheet until set and golden, about 30 minutes.
