- 1/2 cup whole raw almonds
- 1/2 cup pecan halves
- 1/2 cup walnut halves
- 1/4 cup unsalted shelled sunflower seeds
- 1/4 cup unsalted shelled pumpkin seeds
- 2 tablespoons canola oil
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/4 teaspoon ground cumin
- A couple of pinches of cayenne pepper (adjust to taste)
- Preheat the oven to 350F.
- In a large bowl, toss the almonds, pecans, walnuts, sunflower seeds and pumpkin seeds with the canola oil and spices until everything is evenly coated.
- Spread the mixture in a single layer on a rimmed baking sheet and roast for about 15 minutes, stirring or shaking every few minutes so the nuts toast evenly and don't burn.
- Remove from the oven, let cool completely, then transfer to an airtight container for storage.
Tip: Vary the cayenne and chili powder to make the mix milder or hotter, and store the cooled trail mix at room temperature for quick snacks or to pack for trips.
