  • 1/2 cup whole raw almonds
  • 1/2 cup pecan halves
  • 1/2 cup walnut halves
  • 1/4 cup unsalted shelled sunflower seeds
  • 1/4 cup unsalted shelled pumpkin seeds
  • 2 tablespoons canola oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • A couple of pinches of cayenne pepper (adjust to taste)
  1. Preheat the oven to 350F.
  2. In a large bowl, toss the almonds, pecans, walnuts, sunflower seeds and pumpkin seeds with the canola oil and spices until everything is evenly coated.
  3. Spread the mixture in a single layer on a rimmed baking sheet and roast for about 15 minutes, stirring or shaking every few minutes so the nuts toast evenly and don't burn.
  4. Remove from the oven, let cool completely, then transfer to an airtight container for storage.

Tip: Vary the cayenne and chili powder to make the mix milder or hotter, and store the cooled trail mix at room temperature for quick snacks or to pack for trips.
