Ingredients

  • One 2 1/2-pound boneless pork loin roast
  • 1/4 cup olive oil
  • Kosher salt and cracked black pepper

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Drizzle the oil over the pork and season generously with salt and pepper. Place the pork on a rack inside a heavy roasting pan.
  3. Roast the pork until a meat thermometer inserted into the thickest section registers 140 degrees F, approximately 1 hour.
  4. Allow the pork to rest for 10 minutes before slicing and saving any leftovers for future meals.
