French Bread Baguettes

- 1 1/8 cups water at room temperature
- 1 1/2 teaspoons salt
- 3/4 teaspoon granulated sugar
- 3 cups bread flour
- 2 tablespoons wheat germ
- 1 3/4 teaspoons active dry yeast, instant, or bread machine yeast

- Place all ingredients except cornmeal, in the order listed, into the bread pan fitted with the kneading paddle. Secure the pan in your Cuisinart Bread Maker. Press the menu button to select the dough program, then press start to begin mixing, kneading, and rising. For optimal results, scrape down the sides of the pan about 10 to 15 minutes after the cycle starts.
- Once the cycle completes, remove the dough and transfer it to a lightly floured surface. Punch down the dough to deflate and let it rest uncovered for 10 minutes.
- Divide the dough evenly into two portions. Shape each into a long, narrow baguette and place them on a baking sheet dusted generously with cornmeal. Loosely cover with plastic wrap and allow to rise for 30 to 40 minutes. Meanwhile, put a pan filled with hot water on the lower rack of your oven and preheat to 425F (220C).
- Lightly dust the baguettes with flour. Using a serrated knife, make four diagonal cuts about 1/4 inch deep on each loaf. Bake in the preheated oven for 25 to 30 minutes until the crust is golden brown and sounds hollow when tapped. Transfer to a wire rack to cool. For the best texture, slice once completely cooled and enjoy the crusty exterior with a soft, flavorful crumb inside.
