Garlic Mashed Potatoes with Spinach

- 4 large Idaho potatoes, peeled and cut into cubes
- 2 packages chopped spinach, thawed
- 4 tablespoons butter
- 4 garlic cloves, minced finely
- 1/2 cup cream
- Salt and pepper to taste
- 1/4 teaspoon freshly grated nutmeg

- Put the cubed potatoes in a pot filled with water. Add salt to the water and boil the potatoes until soft, about 12 to 15 minutes.
- Wrap the spinach in a clean kitchen towel and squeeze out excess water.
- Drain the potatoes. In the same hot pot, melt the butter, then add the garlic and sauté for 2 to 3 minutes. Stir in the cream, add the spinach, breaking up the greens as you stir. Season the spinach with salt, pepper, and nutmeg.
- Add the potatoes back into the pot and mash everything to your preferred texture.
