  • 4 large Idaho potatoes, peeled and cut into cubes
  • 2 packages chopped spinach, thawed
  • 4 tablespoons butter
  • 4 garlic cloves, minced finely
  • 1/2 cup cream
  • Salt and pepper to taste
  • 1/4 teaspoon freshly grated nutmeg

  1. Put the cubed potatoes in a pot filled with water. Add salt to the water and boil the potatoes until soft, about 12 to 15 minutes.
  2. Wrap the spinach in a clean kitchen towel and squeeze out excess water.
  3. Drain the potatoes. In the same hot pot, melt the butter, then add the garlic and sauté for 2 to 3 minutes. Stir in the cream, add the spinach, breaking up the greens as you stir. Season the spinach with salt, pepper, and nutmeg.
  4. Add the potatoes back into the pot and mash everything to your preferred texture.
