Ingredients
- 1 Granny Smith apple, thinly sliced
- 4 teaspoons extra-virgin olive oil
- 4 flour tortillas, 8 inches each
- 8 ounces brie cheese, sliced with rind removed
- 1 tablespoon whole-grain mustard
- 1 tablespoon maple syrup
- 2 strips of bacon, cooked and crumbled
Instructions
- Warm a grill pan over medium-high heat. Toss the apple slices with 2 teaspoons of olive oil and grill, turning every now and then, until they show grill marks and become tender, about 3 to 4 minutes.
- Place the tortillas on a flat surface. Distribute the grilled apples and brie slices evenly over one half of each tortilla, then fold the other half over to cover the filling.
- In a large nonstick skillet, heat the remaining 2 teaspoons of olive oil over medium heat. Cook the quesadillas in batches until they are crispy golden and the cheese has melted, approximately 2 minutes per side. Meanwhile, combine the mustard and maple syrup in a small bowl. Cut each quesadilla into wedges, drizzle with the maple-mustard sauce, and sprinkle the crumbled bacon over the top.
