Blue Cheese Dressing:
- 1 cup mayonnaise
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 3 dashes Worcestershire sauce

Chicken:

- 2 boneless, skinless chicken breasts, halved lengthwise (resulting in 4 thin breast pieces)
Salad Ingredients:
- 2 heads Bibb lettuce, cored and leaves separated
- 2 heads romaine lettuce, chopped
- 1 head iceberg lettuce, chopped into chunks
- 1 pound crispy cooked thin bacon slices
- 8 ounces red grape tomatoes, halved
- 6 hard-boiled eggs, peeled and sliced
- 2 avocados, diced
- 1/3 cup blue cheese crumbles
- 3 scallions, chopped
- Freshly ground black pepper for sprinkling
Directions:
- Prepare the blue cheese dressing: In a mixing bowl, whisk together mayonnaise, buttermilk, sour cream, and Worcestershire sauce until silky smooth. Fold in blue cheese crumbles and chives, then season with salt and pepper to taste. Cover and refrigerate for a minimum of 2 hours to allow flavors to meld and intensify.
- Cook the chicken: Warm a grill pan or heavy skillet over medium-high heat and add a drizzle of olive oil. Season the chicken halves with salt and pepper. Grill the chicken pieces for 2 to 3 minutes per side, or until fully cooked through. Remove from heat and let cool.
- Assemble the salad: Lay out the Bibb, romaine, and iceberg lettuces in a large bowl or on a big platter, dividing them into three separate sections. Neatly arrange the bacon, tomatoes, eggs, and avocado in separate piles on top. Pile blue cheese crumbles in the center, sprinkle scallions over everything, and finish with freshly ground black pepper.
