Ingredients ():

  • 2 (8.5-ounce) packages corn muffin mix
  • 1/2 cup whole milk
  • 2 cloves garlic, minced
  • 1 (8-ounce) container cottage cheese
  • 4 large eggs
  • 1 tablespoon salt
  • 1 cup plus 2 tablespoons shredded Cheddar cheese
  • 1 stick unsalted butter or margarine
  • 1 medium onion, diced
  • 1 (10-ounce) bag frozen chopped broccoli, thawed but not drained
