Ingredients
- 6 Granny Smith apples, peeled, cored, and cut into half-inch pieces
- 1 cup chopped yellow onion
- 2 tablespoons finely minced fresh ginger
- 1 cup freshly squeezed orange juice (from 2 oranges)
- 3/4 cup quality cider vinegar
- 1 cup lightly packed light brown sugar
- 1 teaspoon whole dried mustard seeds
- 1/4 teaspoon crushed red pepper flakes
- 1 1/2 teaspoons kosher salt
- 3/4 cup raisins
Instructions
- In a large saucepan, combine the apples, onion, ginger, orange juice, vinegar, brown sugar, mustard seeds, red pepper flakes, and salt. Heat over medium-high, stirring occasionally, until the mixture reaches a boil.
- Reduce heat to a gentle simmer and cook, stirring occasionally, for 50 minutes to an hour, until most of the liquid has evaporated and the chutney has thickened beautifully.
- Remove from heat and stir in the raisins, allowing them to plump slightly in the residual heat.
- Let the chutney cool to room temperature, then transfer to an airtight container and refrigerate. It keeps for up to two weeks, making it perfect for gift-giving or enjoying throughout the season.
