Ingredients

  • 1/2 cup quality olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon honey
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped shallot
  • 4 ounces (about 5 cups) mesclun mix

Instructions

  1. In a small bowl, vigorously whisk the olive oil, vinegar, mustard, honey, salt, pepper, and shallots until the dressing is fully emulsified.
  2. Add enough vinaigrette to the greens to coat them lightly and serve immediately.
