Ingredients
- 1/2 cup quality olive oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon honey
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon finely chopped shallot
- 4 ounces (about 5 cups) mesclun mix
Instructions
- In a small bowl, vigorously whisk the olive oil, vinegar, mustard, honey, salt, pepper, and shallots until the dressing is fully emulsified.
- Add enough vinaigrette to the greens to coat them lightly and serve immediately.
