Ingredients
- 1 cup heavy cream
- 1 tablespoon unsalted butter
- Pinch of kosher salt
- 12 ounces premium bittersweet chocolate, roughly chopped
- 1/4 cup almond butter
- 1/2 teaspoon almond extract
- 1/2 teaspoon pure vanilla extract
- 1 to 2 cups crushed amaretti cookies
Instructions
- Make the ganache: In a small saucepan, combine the cream, butter, and salt. Heat over medium until simmering. Place chopped chocolate in a large heatproof bowl. Pour hot cream mixture over chocolate and let sit undisturbed for 10 minutes to melt. Stir until smooth, then mix in almond butter, almond extract, and vanilla until glossy. Transfer to a shallow dish, cover, and chill at least 3 hours or overnight until firm.
- Form the truffles: Line a baking sheet with parchment. Place crushed amaretti cookies in a shallow bowl. Scoop tablespoon-sized portions of ganache, roll into balls, and coat evenly in crumbs. Place on sheet, cover, and refrigerate 1 hour or until firm.
