Ingredients

  • One 3-pound Bison Tri Tip Roast (fresh or fully thawed)* (Refer to Cook's Note)
  • 2 tablespoons olive oil for searing

To prepare the Spice Rub:

  • 2 tablespoons minced garlic
  • 2 tablespoons minced fresh rosemary
  • 2 tablespoons ground coriander
  • 1 tablespoon sweet Hungarian paprika
  • 1 tablespoon celery seed
  • 1 tablespoon ground mustard
  • 1 tablespoon cracked black pepper
  • 1 tablespoon kosher salt

Cooking Instructions

(Keep screen awake by enabling Cook Mode)

  1. Evenly coat the entire roast with olive oil.
  2. In a small bowl, mix together all the spice rub ingredients.
  3. Apply the spice rub evenly over the whole surface of the roast.
  4. Wrap the roast tightly in plastic wrap and refrigerate for a minimum of one hour, or up to 24 hours if time allows.
  5. Preheat your grill to medium-high heat.
  6. Place the roast on a grill lightly brushed with oil, positioning it in the center. Close the grill lid.
  7. Grill the roast for 15 minutes, then flip it and continue grilling for another 15 minutes, totaling 30 minutes of grilling.
  8. Transfer the roast to a carving board. Loosely cover with foil and let it rest for 15 minutes so the juices redistribute.
  9. Slice the roast against the grain into strips.

This method is also suited for a Bison Sirloin Tip roast.
