Grilled Herb Bison Tri Tip Roast Recipe

Ingredients
- One 3-pound Bison Tri Tip Roast (fresh or fully thawed)* (Refer to Cook's Note)
- 2 tablespoons olive oil for searing
To prepare the Spice Rub:
- 2 tablespoons minced garlic
- 2 tablespoons minced fresh rosemary
- 2 tablespoons ground coriander
- 1 tablespoon sweet Hungarian paprika
- 1 tablespoon celery seed
- 1 tablespoon ground mustard
- 1 tablespoon cracked black pepper
- 1 tablespoon kosher salt
Cooking Instructions
(Keep screen awake by enabling Cook Mode)
- Evenly coat the entire roast with olive oil.
- In a small bowl, mix together all the spice rub ingredients.
- Apply the spice rub evenly over the whole surface of the roast.
- Wrap the roast tightly in plastic wrap and refrigerate for a minimum of one hour, or up to 24 hours if time allows.
- Preheat your grill to medium-high heat.
- Place the roast on a grill lightly brushed with oil, positioning it in the center. Close the grill lid.
- Grill the roast for 15 minutes, then flip it and continue grilling for another 15 minutes, totaling 30 minutes of grilling.
- Transfer the roast to a carving board. Loosely cover with foil and let it rest for 15 minutes so the juices redistribute.
- Slice the roast against the grain into strips.
This method is also suited for a Bison Sirloin Tip roast.
