- 1 (8-ounce) package cream cheese, softened
- 2 cups loosely packed fresh cilantro leaves (about 1 bunch)
- 1 cup sour cream
- 3 garlic cloves, minced
- Finely chopped fresh cilantro leaves for garnish
- Cook the yellow rice per package instructions, adding 1 teaspoon salt. Let it cool completely for easy mixing.
- In a skillet over medium heat, brown the sausage, crumbling it until no longer pink. Drain fat well and cool slightly.
- In a large bowl, mix cooled rice, sausage, black beans, diced tomatoes, cheese, green onions, and taco seasoning. Spoon about 1/3 cup onto the center of each egg roll wrapper. Fold top corner over filling, tuck in sides, brush with egg, and roll tightly to seal.
- Heat peanut oil to 375F in a Dutch oven. Fry egg rolls in batches, 2-3 minutes until golden and crispy. Drain on a wire rack over paper towels. Serve hot with Creamy Cilantro Dipping Sauce and cilantro garnish for that fresh pop!
