No one would suspect these wings come from the oven. The baking powder in the coating makes the skin extra crispy. After baking, the wings are generously coated in my classic Carolina BBQ sauce, which is mustard-based. This tangy sauce also pairs wonderfully with pork and can be prepared ahead and refrigerated for up to two weeks.
Carolina BBQ Sauce Ingredients
- 1 cup yellow mustard
- 1 cup firmly packed light brown sugar
- 1/2 cup granulated sugar
- 1/3 cup apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 2 teaspoons hot sauce
Oven-Roasted Chicken Wings Ingredients
- Nonstick cooking spray, for greasing the baking sheets
- 3 pounds whole chicken wings (approximately 14 wings)
- 1 cup all-purpose flour
- 2 teaspoons Miss Brown's House Seasoning (recipe below)
- 1 teaspoon baking powder
Miss Brown's House Seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sweet paprika
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- Preheat your oven to 425F. Line two rimmed baking sheets with aluminum foil and set a wire rack on each. Spray the racks lightly with nonstick cooking spray.
- Prepare the Carolina BBQ sauce: In a medium saucepan over medium heat, whisk together the mustard, light brown sugar, granulated sugar, apple cider vinegar, Worcestershire sauce, and hot sauce. Simmer the mixture, stirring frequently, until it thickens and sugars dissolve, about 10 minutes. Reserve half of the sauce for basting and serving later.
- Prepare the wings: Pat the chicken wings dry using paper towels. In a bowl, combine the flour, Miss Brown's House Seasoning, and baking powder. Coat the wings with the flour mixture and place them in a single layer on the wire racks. Bake for 30 minutes.
- After 30 minutes, flip the wings, baste them with the Carolina BBQ sauce, and continue baking until golden brown and crisp, and the internal temperature reaches 165F, about 15 to 20 minutes more.
- Before serving, brush the wings with the reserved sauce to add extra flavor.

- Mix garlic powder, onion powder, sweet paprika, kosher salt, and black pepper in a small bowl. Store in an airtight container at room temperature for future use.
