Mango and Brie Quesadilla Ingredients:
- 4 (8-inch) flour tortillas (commonly found in grocery stores, sometimes in refrigerated or frozen sections)
- 1 ripe mango, peeled and sliced (substitute with papaya or pear if needed)
- 1 serrano chili or 2 jalapeo chilies, finely chopped
- 2 scallions, trimmed and chopped
- 1/2 cup lightly packed fresh cilantro leaves, chopped (discard stems before measuring)
- 8 ounces Brie, sliced into 1/4-inch thick long strips (removing rind is optional but recommended)
- Sour Cream and Lime Dipping Sauce (see recipe below)
Sour Cream and Lime Dipping Sauce Ingredients:
- 1/4 cup sour cream or plain yogurt
- 2 tablespoons freshly squeezed lime juice
- 1/4 teaspoon salt
Preparation Instructions:
- Preheat a 10-inch nonstick skillet over medium-high heat. Place one tortilla in the dry pan for about 1 minute on each side, until it starts to brown lightly. Remove from pan. Repeat with a second tortilla. If the tortilla puffs up like a balloon, gently pierce it with a fork to release steam.
- Keep the second toasted tortilla in the pan, reduce heat to medium-low. Evenly spread half of the mango slices over it, then layer half of the minced chilies, scallions, cilantro, and Brie strips on top. Place the first toasted tortilla over all.
- Cover the pan with a lid, cook over medium-low heat for 2 minutes.
- Using a spatula, flip the entire quesadilla carefully, cover again, and cook for an additional 2 minutes. Some cheese may leak and sizzlethat's normal and adds flavor.
- Remove quesadilla from the pan and let it rest for one minute before cutting into 8 wedges like a pizza. Serve immediately alongside the sour cream and lime sauce.
- Repeat the process with the remaining ingredients. Enjoy!
