Garlic Butter Shrimp with White Wine Sauce

Ingredients
- 2 tablespoons butter
- 1 pound medium shrimp, peeled and deveined with tails on
- Salt and freshly ground black pepper to taste
- 1/4 cup finely chopped onion
- 8 garlic cloves, minced
- 3 tablespoons white wine
- 1 tablespoon fresh lime juice
- 2 tablespoons chopped fresh parsley
- Cooked white rice for serving (optional)
Instructions
- In a heavy medium skillet over medium heat, melt the butter. Season the shrimp generously with salt and pepper. Cook for about 4 minutes until nearly done. Transfer to a plate and cover loosely with foil.
- In the same skillet, saut the onion and garlic until the onion becomes translucent, approximately 6 minutes. Pour in the white wine, scraping up the browned bits from the pan bottom. Allow to boil for 1 minute to reduce slightly.
- Stir in the lime juice and parsley. Return the shrimp to the skillet and toss gently in the sauce. Cook for 1 more minute until the shrimp are fully cooked through. Taste and adjust seasoning as needed.
- Transfer to a serving dish and enjoy on its own or served over white rice.
