Seared Radicchio with Balsamic and Parmesan

Ingredients
- 2 large radicchio heads (about 8 ounces each)
- 2 tablespoons extra-virgin olive oil
- Kosher salt
- Freshly ground black pepper
- 1/4 cup balsamic vinegar
- 1 to 2-ounce chunk of pecorino or Parmesan cheese
Instructions
- Slice each radicchio head into 4 equal wedges through the core. Warm a large skillet over medium-high heat and add the olive oil. Place the radicchio wedges cut-side down in the skillet and sprinkle with salt and pepper. Cook until the cut sides are browned and the radicchio softens slightly, approximately 3 minutes. Flip the wedges and cook the other sides for around 2 more minutes. Remove the radicchio from the skillet and set aside on a plate.
- Pour the balsamic vinegar into the skillet and boil until it thickens to a syrupy consistency and reduces by about half, taking about 1 minute. Put the radicchio back into the pan and toss to coat evenly with the balsamic glaze. Season again with salt and pepper to taste.
- Serve the radicchio warm, distributing it onto 4 plates. Using a vegetable peeler, shave generous pieces of cheese on top.
