Ingredients for the Fish:

  • 2 cups blanched slivered almonds
  • Kosher salt
  • Extra-virgin olive oil
  • 4 tablespoons unsalted butter
  • 2 cups all-purpose flour
  • Freshly ground black pepper
  • 4 eggs
  • 1 cup milk
  • 4 sole fillets, cleaned (about 6 ounces each)

Ingredients for the Sauce:

  • 1 large or 3 small shallots, finely chopped
  • 1 cup white wine
  • Juice of 1 lemon
  • 1/4 cup chopped flat-leaf parsley
  • Kosher salt and freshly ground black pepper

Instructions:

  1. Heat a large nonstick saut pan over medium heat. Toast the almonds until golden brown, about 5-7 minutes. Season with Kosher salt and set aside for a delightful crunchy topping.
  2. Return the pan to medium heat. For efficiency, use two pans if available: add olive oil and 1 tablespoon butter to each.
  3. In a shallow dish, season 2 cups all-purpose flour with salt and pepper. In another, whisk 4 eggs and 1 cup milk, seasoning similarly.
  4. Dredge each sole fillet in flour, then egg mixture, letting excess drip. Fry in batches of two for 1.5-2 minutes per side until golden and irresistible.
  5. Baste with pan butter for extra moisture and flavor. After 30 seconds on the second side, transfer to a warm serving plate.
  6. Repeat with remaining fillets, adding more oil and butter as needed. Your kitchen will smell amazing!
  7. With all fish cooked, saut shallots over low heat until translucent, about 1 minute.
  8. Deglaze with 1 cup white wine, reducing until flavorful. Stir in lemon juice and swirl in remaining 2 tablespoons butter for silky perfection.
  9. Finish with chopped parsley, salt, and pepper. Taste and adjust for brightness.
  10. Drizzle the luscious sauce over the sole and shower with toasted almonds. Serve immediately for a restaurant-worthy meal that'll wow your guests!
