With pantry favorites like hoisin sauce, Sriracha, and sesame oil, you can build burgers bursting with sweet, spicy, and nutty flavors right on the grill.
Ingredients
- 1 and 1/2 pounds ground beef, chuck is best
- Kosher salt and fresh black pepper, to taste
- Vegetable oil, for greasing the grill
- 1/4 cup hoisin sauce
- 6 scallions
- 1/2 teaspoon sesame oil, and extra for brushing
- 4 sesame seed sandwich buns, split in half
- 1/2 cup mayonnaise
- 1 teaspoon Sriracha (Asian chili sauce)
- 12 thin cucumber slices
Instructions
- Preheat your grill to medium-high heat. Shape the ground beef into four patties, each weighing about 6 ounces and roughly 3/4 inch thick. Press your thumb into the center of each patty to create a small well about 1/2 inch deep. Season both sides lightly with salt and pepper. Lightly oil the grill rack, then set the patties on the grill with the indentation facing up. Grill until browned underneath, about 5 minutes. Flip and cook until marked and just beginning to firm, roughly 3 more minutes for medium. In the final minute, brush each burger with hoisin sauce. Move them to a plate and let rest for five minutes.
- Meanwhile, brush scallions lightly with sesame oil and season with salt. Grill, turning as needed, until tender and charred, about 34 minutes. Slice them into pieces roughly 4 inches long. Grill the cut sides of the buns for about a minute until toasted.
- In a small bowl, stir together the mayonnaise, Sriracha, and a little sesame oil. Spread this mixture over the buns. Layer cucumber slices on the bottom halves, top with the burger patties and grilled scallions, and close with the other bun halves.
