  • 2 garlic cloves, peeled and finely chopped
  • Extra-virgin olive oil
  • 1 tablespoon water
  • Kosher salt
  • Freshly ground black pepper
  • 1 large egg yolk
  • Juice of 1 lemon
  • 1/2 cup extra-virgin olive oil
  • 2 anchovy fillets
  • 1/2 cup sour cream

  1. Combine the garlic, egg yolk, anchovy fillets, lemon juice, salt, and black pepper in a blender and blend until smooth.
  2. Slowly drizzle the olive oil into the blender while it's running to emulsify the mixture into a creamy aioli.
  3. Carefully fold in the sour cream, then taste and adjust the seasoning with additional salt and pepper if necessary.
