Ingredients
- 10 cups water
- 2 limes, halved
- 6 tablespoons honey, divided
- 4-inch piece fresh ginger, peeled and chopped
- 2 teaspoons sea salt
- 2 teaspoons whole black peppercorns
- 4 to 6 tablespoons loose green tea leaves
- 4 (6-ounce) boneless, skinless salmon fillets
Instructions
- Pour the water into a straight-sided skillet or pot with a lid. Squeeze the juice from 3 lime halves into the water, add the halves, along with 5 tablespoons honey, chopped ginger, sea salt, and peppercorns. Bring to a boil over medium-high heat. Reduce to a simmer, cover, and cook 10 minutes to infuse flavors. Reserve cup poaching liquid. Remove from heat, stir in green tea, and steep 3-5 minutes. Add salmon fillets, cover, and poach until firm, 6-7 minutes.
- Meanwhile, in a small saucepan over low heat, combine reserved poaching liquid, juice and zest from remaining lime half, and 1 tablespoon honey. Simmer until reduced by two-thirds and thickened, 7-10 minutes.
