Habanero Onion Puree:
- 1 large Texas yellow onion
- 4 red habaneros
- 1 cup white vinegar
- Salt and white pepper to taste
Jalapeno Mayo:
- 1 cup mayonnaise
- 1/4 cup finely chopped Texas yellow onion
- 1/4 cup minced escabeche-style jalapeno peppers
- 1/4 cup finely chopped red bell peppers
- Juice of 1 lime
- Salt and white pepper to taste
Instructions
- Season each soft-shell crawfish with paprika and crab boil seasoning evenly. Coat them in the cornstarch, shaking off any extra flour. Quickly fry the crawfish in a hot, oiled skillet for about 45 seconds to avoid overcooking.
- For each taquito, gently butter the tortilla and warm it. Spread 2 teaspoons of hoisin sauce evenly over the warm tortilla, then sprinkle with 1 teaspoon toasted sesame seeds. In the middle, layer 2 tablespoons of chiffonade romaine, followed by 1/2 tablespoon red cabbage, and top with 1 teaspoon of Habanero Onion Puree.
