  • 2 soft-shell crawfish
  • 2 teaspoons paprika
  • 2 teaspoons crab boil seasoning
  • 1/4 cup cornstarch
  • 2 (4-inch) flour tortillas
  • 2 teaspoons butter, melted or softened
  • 4 teaspoons hoisin sauce
  • 2 teaspoons toasted white sesame seeds
  • 4 tablespoons chiffonade romaine lettuce
  • 1 tablespoon chiffonade red cabbage
  • 2 teaspoons Habanero Onion Puree (recipe below)
  • 4 teaspoons Jalapeno Mayo (recipe below)
  • 2 tablespoons fried rice sticks
  • 2 slices avocado
  • 2 teaspoons sesame oil
  • 2 fresh cilantro leaves, for garnish

Habanero Onion Puree:

  • 1 large Texas yellow onion
  • 4 red habaneros
  • 1 cup white vinegar
  • Salt and white pepper to taste

Jalapeno Mayo:

  • 1 cup mayonnaise
  • 1/4 cup finely chopped Texas yellow onion
  • 1/4 cup minced escabeche-style jalapeno peppers
  • 1/4 cup finely chopped red bell peppers
  • Juice of 1 lime
  • Salt and white pepper to taste

Instructions

  1. Season each soft-shell crawfish with paprika and crab boil seasoning evenly. Coat them in the cornstarch, shaking off any extra flour. Quickly fry the crawfish in a hot, oiled skillet for about 45 seconds to avoid overcooking.
  2. For each taquito, gently butter the tortilla and warm it. Spread 2 teaspoons of hoisin sauce evenly over the warm tortilla, then sprinkle with 1 teaspoon toasted sesame seeds. In the middle, layer 2 tablespoons of chiffonade romaine, followed by 1/2 tablespoon red cabbage, and top with 1 teaspoon of Habanero Onion Puree.
  3. Drizzle 2 teaspoons of Jalapeno Mayo on top, then sprinkle with 1 tablespoon fried rice sticks. Add a slice of avocado and one fried crawfish on the pile. Finish by drizzling 1 teaspoon sesame oil over the crawfish and garnish with a cilantro leaf. Repeat the process with the other tortilla.

Habanero Onion Puree Preparation:

  1. Place all puree ingredients into a food processor and blend until smooth but textured. Season with salt and white pepper to taste.

Jalapeno Mayo Preparation:

  1. Mix all ingredients thoroughly in a bowl. Adjust seasoning with salt and white pepper. Refrigerate until needed.
