Ingredients
For Assembly:
- 20 tortilla scoop chips
- Refried Beans (recipe below)
- Store-bought or homemade pico de gallo for topping
- Chipotle Cashew Cream (recipe below)
- Pickled jalapenos for garnish
Refried Beans:
- Two 15-ounce cans black beans
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Kosher salt
Chipotle Cashew Cream:
- 1 cup raw cashews, soaked overnight and drained
- 1/2 cup fresh cilantro
- 1 teaspoon chipotle powder
- Juice of 1 lime
- Kosher salt
Instructions
Assembly:
Assemble each tortilla scoop chip by layering Refried Beans and pico de gallo. Complete each bite with a drizzle of Chipotle Cashew Cream and a pickled jalapeno slice.
Refried Beans (Yield: approximately 2 cups):
In a medium saucepan over medium heat, warm the black beans with cumin, chili powder, and salt until heated through, about 5 to 8 minutes. Transfer to a food processor and puree until smooth.
Chipotle Cashew Cream (Yield: about 1 1/2 cups):
Blend the cashews, cilantro, chipotle powder, lime juice, 1/4 cup water, and salt in a blender until creamy and smooth. Add more water if the consistency is too thick.
