Transform classic grilled cheese into a crowd-pleasing sensation! Skip the stovetop hassle and bake a batch of gooey, golden sandwiches on a single sheet pan. Perfect for gatherings, this method lets you relax with loved ones while the oven works its magicdelivering buttery bliss every time.

  • 12 slices assorted bread (such as Texas Toast, pumpernickel, sourdough)
  • 1 stick (8 tablespoons) salted butter, softened to room temperature
  • 12 slices assorted cheese (American, Cheddar, Muenster, etc.)
  • 1 cup Kardea's Pimento Cheese (recipe below)
  • Toppings of choice: sliced roasted red peppers, pickles, sliced ham, turkey, tomatoes, fresh basil, sliced red onion, or pulled pork

Kardea's Pimento Cheese:

  • 8 ounces extra-sharp yellow Cheddar, shredded (about 2 cups)
  • 8 ounces cream cheese, softened
  • 4 ounces white Cheddar, shredded (preferably Vermont Cheddar, about 1 cup)
  • 4 ounces diced pimentos, drained (reserve juice)
  • 3 tablespoons mayonnaise
  • 1 tablespoon finely chopped fresh chives
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon smoked paprika
  • Kosher salt and freshly ground black pepper to taste

Directions:

  1. Place a rack in the lower part of your oven and set a large rimmed baking sheet onto it. Preheat the oven to 450F (232C).
  2. Spread 4 tablespoons of softened butter on one side of 6 slices of bread. Arrange these slices, buttered side down, on a clean, large rimmed baking sheet.
  3. On each buttered bread slice, layer one slice of cheese or some of the Pimento Cheese, then add your desired toppings. Finish with another slice of cheese, then top with the remaining 6 bread slices. Spread the remaining 4 tablespoons of butter evenly over the top slices of bread.
  4. Carefully take the preheated baking sheet out of the oven and place it upside down on top of the assembled, unbaked sandwiches, rim edges facing up. Press down gently on the stack.
  5. Put the stacked baking sheets together onto the bottom rack of the oven. Bake for 10 to 12 minutes or until the cheese is thoroughly melted and the bread is crispy and golden brown. Serve immediately.

Kardea's Pimento Cheese Recipe Yield: About 4 cups

  1. Combine yellow Cheddar, cream cheese, white Cheddar, pimentos, and mayonnaise in a bowl. Mix until smooth.
  2. Add chives, garlic powder, cayenne, smoked paprika, salt, and pepper, stirring well to blend flavors evenly.
  3. Keep the pimento cheese refrigerated in an airtight container for up to one week.
