Ingredients

  • 1 pound green beans, ends trimmed
  • Pinch of salt
  • 4 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 cups milk
  • teaspoon garlic powder
  • teaspoon dry mustard
  • Pinch of ground black pepper
  • Pinch of cayenne pepper
  • 1 cup shredded Cheddar cheese
  • 4 ounces cream cheese, softened

Instructions

  • In a large saut pan over medium heat, bring 1/4 cup water to a boil. Add the green beans and a pinch of salt, cover, and steam 2 minutes. Remove the lid, raise heat to high, and cook until the water evaporates, about 1 minute.
  • Stir in 1 tablespoon butter and cook 12 minutes more until the beans are crisp-tender. Remove from heat.
  • In a medium saucepan, melt the remaining 3 tablespoons butter over medium heat. Stir in the flour and cook, stirring constantly, until golden, about 2 minutes.
  • Gradually whisk in the milk, garlic powder, dry mustard, black pepper, and cayenne. Whisk until the sauce thickens, about 2 minutes.
  • Stir in the shredded Cheddar and softened cream cheese until fully melted and smooth.
  • Serve the cheese sauce poured over the green beans or alongside as a dip.
