Lime, Chile and Cilantro Mayo Recipe

Ingredients
- 2 egg yolks, lightly beaten
- 1 large clove garlic, finely chopped
- 1 teaspoon Dijon mustard
- Juice of 1 lime
- Kosher salt and freshly ground black pepper
- 1 1/4 cups sunflower, groundnut (peanut) or light olive oil
- 1 red chile, seeded and shredded
- 1 small bunch fresh cilantro leaves, very finely chopped
Keep half of the chile seeds aside. You may not need to use all of the lime juice.
Instructions
- Place the egg yolks into a bowl and combine with the garlic, mustard, and a portion of the lime juice.
- Season with salt and pepper, then, using an electric hand mixer or whisk, beat the mixture while slowly incorporating the oil, drop by drop. Continue adding oil until the mixture thickens and emulsifies. If the mayonnaise begins to separate, stir in a spoonful of warm water to bring it back together. If the texture is too thick, add a little more warm water until it reaches your preferred consistency.
- Fold in the shredded chile, including some of the seeds (add a few at a time, depending on how spicy you want it), the chopped cilantro, and the remaining lime juice, to taste.
