Whip up this irresistible garlic brown sugar chicken in just 40 minutes! Tender, juicy boneless chicken breasts burst with zesty flavors from garlic, a hint of brown sugar, and a kick of red pepper flakes. Paired with perfectly roasted red potatoes, it's an easy weeknight winner that will have your family raving.
- 2 pounds small red-skinned potatoes, quartered
- 3 tablespoons extra-virgin olive oil
- 1/2 teaspoon cumin seeds (optional)
- Kosher salt and freshly ground black pepper
- 4 cloves garlic, finely chopped
- 2 tablespoons packed light brown sugar
- 1 lemon (half juiced, half sliced into wedges)
- Pinch of red pepper flakes
- 4 skinless, boneless chicken breasts (about 1 1/2 to 1 3/4 pounds)
- 2 tablespoons chopped fresh cilantro or parsley
Instructions:
- Position a rack in the lower third of the oven and preheat to 425F. Toss potatoes with 1 tablespoon olive oil, cumin seeds (if using), 3/4 teaspoon salt, and pepper. Spread in a large baking dish and roast until golden, 25-30 minutes.
- Meanwhile, heat remaining 2 tablespoons olive oil in a small skillet over medium. Saut garlic, stirring often, until lightly golden, about 2 minutes. Off heat, stir in brown sugar, lemon juice, and red pepper flakes. Remove potatoes from oven, push to sides, and nestle in chicken breasts. Season chicken with salt and drizzle with garlic mixture. Bake until chicken is cooked through and potatoes are tender, about 20 minutes.
- Transfer chicken to a cutting board and slice. Toss potatoes with cilantro or parsley in the dish. Serve sliced chicken with potatoes, lemon wedges, and pan juices for maximum flavor!
