Ingredients

  • 1/4 cup (60 ml) stout or lager-type beer
  • 1/4 cup (50 g) soft tofu
  • 1/4 pound (115 g) cream cheese
  • 3/4 pound (340 g) cheddar cheese, cut into cubes
  • 1/4 cup (25 g) prepared horseradish
  • 2 tablespoons (20 g) finely chopped red onion
  • 1 teaspoon dried mustard powder
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt

Instructions

  1. Add each ingredient in the order listed to the Vitamix container and attach the lid securely.
  2. Set to Variable 1.
  3. Turn on the machine and rapidly increase the setting to Variable 10, then to High.
  4. Blend for one minute, using the tamper as needed to push ingredients toward the blades.
  5. Pause the blender about halfway through (30 seconds) to scrape down the sides if needed, then continue blending.
