Roll-Ups Ingredients:
- 2 large eggs, whisked until smooth
- 1/3 cup milk
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 12 slices soft white sandwich bread
- 2 tablespoons unsalted butter
- Confectioners' sugar, for dusting
- Maple syrup, for serving
Filling Options:
Banana-Strawberry:
- 2 bananas, halved and thinly sliced
- 12 medium strawberries, roughly chopped
Blueberry and Cream Cheese:
- 1/4 cup cream cheese, softened to room temperature
- 1 1/2 cups blueberries
Apple-Peanut Butter:
- 1/4 cup creamy peanut butter
- 1/2 apple, thinly sliced and julienned
Sausage and Cheese:
- 6 thin slices Cheddar cheese, halved
- 12 cooked breakfast sausage links
Directions:
- Prepare the egg mixture by whisking together eggs, milk, sugar, vanilla, cinnamon, and salt in a medium bowl until fully blended. Set aside.
- Flatten each bread slice with a rolling pin to make it more flexible. Remove crusts from all slices.
- For Banana-Strawberry: Lay a thin 1-inch strip of banana slices along the bottom edge of a bread slice. Add a small line of chopped strawberries (about 1 tablespoon), being careful not to overfill. Starting from the fruit side, roll the bread tightly to encase the fruit. Repeat with remaining slices and fruit.
- For Blueberry and Cream Cheese: Spread 1 teaspoon cream cheese along a 3/4-inch strip on the bottom of each bread slice. Add two rows of blueberries (2 to 3 tablespoons). Roll tightly starting from the fruit end. Continue with all slices and filling.
- For Apple-Peanut Butter: Spread 1 teaspoon peanut butter along a 3/4-inch strip at the bottom of each bread slice. Top with apple slices, not overfilling. Roll tightly from the fruit side. Repeat for remaining slices.
- For Sausage and Cheese: Place half a slice of Cheddar along the bottom edge of bread, then top with one cooked sausage link. Roll tightly starting from the sausage end. Repeat with remaining bread, cheese, and sausage.
- For cooking, dip each roll-up into the reserved egg mix, making sure every side is coated and the exposed edge is sealed tightly to prevent unrolling. Repeat for all roll-ups.
- Heat 1 tablespoon butter in a large nonstick skillet over medium heat. Cook half of the roll-ups, gently pressing them flat so that each side turns golden brown, about 1 minute per side. Transfer to a plate and cover to stay warm. Repeat with the remaining butter and roll-ups.
- Sprinkle with confectioners' sugar before serving and offer maple syrup alongside.
