Ingredients
- 2 peaches, halved and stone removed
- 1 pint fresh blackberries
- 1 cup nonfat Greek yogurt
- 1/2 cup peach nectar
- A dash of vanilla extract
- 1 cup ice cubes
Cooking Instructions
- Roast the fruit: Preheat the oven to 375F. Arrange the peaches (cut side up) and blackberries on a baking tray and roast, turning once, until very soft and caramelized, about 30 minutes. Transfer the fruit to a plate and let cool. (You can roast the fruit up to one day ahead and store it in a sealed container.)
- Blend: In a blender, combine the roasted fruit, Greek yogurt, peach nectar, vanilla extract, and ice cubes. Blend until smooth.
- Serve: Pour into two large glasses and serve immediately.
