Ingredients: (Serves 6)
- 6 jumbo eggs, beaten
- 1/4 cup heavy cream
- 2 tablespoons vanilla extract
- 2 tablespoons ground cinnamon, plus extra for topping
- Salt
- 1/4 cup sugar
- 12 slices brioche bread, about 1/2-inch thick
- 6 ounces apple pie filling
- 6 ounces cherry pie filling
- Nonstick cooking spray
- Powdered sugar, for topping

- Preheat indoor grill or griddle.
- In a medium bowl, whisk together eggs, cream, vanilla, cinnamon, a pinch of salt, and sugar until thoroughly blended.
- Place 6 slices of bread on a work surface and lightly brush the edges with the egg mixture. Create a small pocket in the center of each slice. Fill each pocket with about 2 teaspoons of apple or cherry pie filling.
- Take the remaining 6 slices of bread and brush their edges with the egg mixture. Place each slice on top of a filled slice, pressing the edges together to seal.
- Dip each stuffed bread sandwich into the egg mixture, coating both sides. Place on the sprayed griddle and cook for 6 to 8 minutes, flipping once, until golden brown. Sprinkle with cinnamon and/or powdered sugar before serving.
