- 1 lb ground turkey
- 1 cup Panko breadcrumbs
- 1/3 cup milk
- 1 egg
- 1 tbsp sage
- 1 tbsp fresh thyme leaves
- 1 tsp salt
- 1 tsp freshly cracked pepper
- 1 cup cremini mushrooms, sliced (optional)
- 1 tbsp olive oil
- 1/2 cup unsalted butter
- 3 tbsp canola oil
- 1 red onion, thinly sliced
- 1 yellow onion, thinly sliced
- 8 slices rye bread
- 8 slices Gruyere cheese

- Grab a big bowl and mix Panko breadcrumbs, milk, egg, sage, thyme, salt, and pepper. Let it soak for a few minutes to get that perfect bind, then fold in the ground turkey. Form into oblong patties sized to your rye bread slices. Line a baking sheet with parchment, arrange the patties, and chill in the fridge for 20-30 minutes to firm up for grilling glory.
- While patties rest, melt 1/4 cup butter with 1 tbsp canola oil in a large saut pan over medium heat. Toss in the sliced red and yellow onions; stir occasionally for 15-20 minutes until they're gorgeously caramelized and golden. Slide onto a plate and keep warmthese are your flavor stars!
- In the same pan, add 3 tbsp canola oil and sliced mushrooms (if using). Saut over medium-high heat for 6-8 minutes until tender and browned. Transfer to a plate and keep warm.
- Heat a griddle or cast iron skillet to medium-high; add 1 tbsp canola oil and spread it out. Grill the turkey patties 4-5 minutes per side until cooked through and juicy. Remove, cover, and keep warm.
- Butter both sides of the rye bread slices. In the pan, place bread butter-side down, layer with Gruyere, a hot turkey patty, heaps of caramelized onions (and mushrooms if you like), then top with another bread slice, butter-side up. Cook 2-3 minutes until golden, flip, and toast the other side. Slice diagonally and serve hot with mustard and spicy cherry peppers for that irresistible bite!
