Ingredients
- 1 box (18.25 ounces) raisin bran muffin mix (recommended brand: Sun-Maid)
- 2 egg whites
- 1 1/4 cups grated zucchini (about one medium zucchini)
- 1/4 cup unsweetened applesauce
- 3/4 cup apple juice
- 1 teaspoon ground cinnamon
- 1 cup raisins
Instructions
- Heat the oven to 400F. Lightly grease the muffin tin cups with canola cooking spray and set aside.
- Mix all ingredients together in a bowl until thoroughly combined.
- Divide the batter evenly into the prepared muffin cups, filling each about two-thirds full.
