Ingredients

  • 1 box (18.25 ounces) raisin bran muffin mix (recommended brand: Sun-Maid)
  • 2 egg whites
  • 1 1/4 cups grated zucchini (about one medium zucchini)
  • 1/4 cup unsweetened applesauce
  • 3/4 cup apple juice
  • 1 teaspoon ground cinnamon
  • 1 cup raisins

Instructions

  1. Heat the oven to 400F. Lightly grease the muffin tin cups with canola cooking spray and set aside.
  2. Mix all ingredients together in a bowl until thoroughly combined.
  3. Divide the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  4. Bake for 20 to 22 minutes or until the muffin tops turn golden brown.
