Bacon-Swiss Relish Recipe

Directions

  1. Cook 3 slices of diced bacon in a large skillet over medium-high heat until crispy, about 8-10 minutes. Remove the bacon and set aside on a paper towel-lined plate.
  2. Add 2 sliced onions to the same pan with the bacon drippings. Season generously with salt and pepper.
  3. Reduce heat to low, cover the pan, and cook for 10 minutes to soften the onions.
  4. Uncover and continue cooking, stirring occasionally, until the onions become deep golden brown, approximately 30 additional minutes.
  5. Stir in 1/4 cup mayonnaise, 1/4 cup grated Swiss cheese, and 2 tablespoons chopped fresh parsley. Fold in the reserved bacon until well combined.
