Ingredients

  • 8 hard-boiled eggs, peeled and split in half lengthwise
  • 1/2 cup light mayonnaise
  • 1/4 cup low-fat (1 percent) smooth cottage cheese, well-drained
  • 1 tablespoon curry spice blend
  • 1 tablespoon Dijon mustard
  • Dash of spicy hot sauce
  • Paprika powder, for dusting
  • Fresh parsley, for decoration

Instructions

  1. Take 4 of the egg yolks and place them into a food processor or blender (set aside and discard the remaining 4 yolks) along with the light mayonnaise, cottage cheese, curry spice blend, Dijon mustard and spicy hot sauce. Blend until the mixture reaches a smooth consistency.
  2. Transfer the filling into a pastry bag equipped with a star-shaped tip. Carefully pipe the prepared filling into each egg white cavity, then dust generously with paprika powder. Top with fresh parsley sprigs as a finishing touch. Cover and place in the refrigerator until you are ready to serve.
