Ingredients
- 3 cups red wine
- 1 cup sugar
- 1 cinnamon stick
- 2 whole cloves
- 2 to 3 whole peppercorns
- 1 or 2 lemon peel strips
- 2 large peaches, halved and pitted
- 1 pint vanilla bean ice cream
- Whipped cream in a canister
- Freshly grated nutmeg for garnish
Instructions
- In a medium saucepan, combine the wine, sugar, cinnamon stick, cloves, peppercorns, and lemon peel. Bring to a boil, stir until the sugar dissolves, then lower the heat until it simmers gently.
- Allow the poaching liquid to simmer on high until it thickens into a syrupy consistency. Add the peach halves and poach them, spooning the syrup over the fruit from time to time, until a knife inserts easily into the peaches, about 5 minutes.
- Place the poached peach halves into two dessert dishes. Top each with vanilla bean ice cream and a dollop of whipped cream. Drizzle with the reduced syrup and finish with a sprinkle of freshly grated nutmeg.
