Ingredients
- 4 red pears
- 1 bottle port wine
- 1 star anise pod
- 1/2 ounce fresh ginger, cut into thin strips
- 4 to 5 tablespoons sugar
- 8 ounces semisweet chocolate
- 1 cup heavy whipping cream
- Powdered sugar, for sweetening
- Ground cinnamon
Instructions
- Peel and core the pears, then place them in a pot with the star anise and port wine. Bring to a boil, allowing the alcohol to evaporate (use caution, as it may briefly ignite). Reduce to a gentle simmer, fully submerge the pears, and cook for 35-40 minutes until tender. Remove pears and set aside. Boost the heat to reduce the liquid to a thick syrup, about one-quarter of the original volume.
- In a small pan, cook julienned ginger with sugar over medium heat, stirring until caramelized and golden. Spread on parchment-lined tray to cool.
- Melt semisweet chocolate gently in a double boiler, stirring until smooth.
- Whip heavy cream to stiff peaks, folding in powdered sugar and a dash of cinnamon. Chill until serving.
