In this part of the country, pickle-forward appetizers are everywhere from fried pickles to creamy pickle dips to these classic pickle roll-ups. Molly first tasted them at a holiday hosted by her mother-in-law, Roxanne, and loved them immediately. For her version, she adds prepared horseradish to the cream cheese for an extra bright, savory kick.
Ingredients
- 4 ounces cream cheese, softened to room temperature
- 1 tablespoon (20 grams) prepared horseradish
- Kosher salt and freshly ground black pepper
- 4 thick slices deli ham
- 4 kosher dill pickle spears, well dried
Instructions
- 1. In a small bowl, combine the cream cheese and prepared horseradish, then season with freshly ground black pepper and a light pinch of kosher salt (taste first the ham and pickles are already salty).
- 2. Lay the ham slices flat and spread one-quarter of the cream cheese mixture over each slice, covering the surface to the edges. Place a well-dried pickle spear along a short side of each slice and roll the ham around the pickle.
- 3. Chill the rolled ham in the refrigerator for 1015 minutes to firm up. Using a sharp knife, slice each roll into 8 bite-sized pieces and serve immediately.
