Beat the summer heat with this bursting-with-freshness smoothie, loaded with immune-boosting vitamin C from juicy watermelon. Stock your freezer with watermelon chunks for an instant, invigorating treat anytime the craving strikes!
- One 2-inch piece of English cucumber, peeled and coarsely chopped (about cup), plus an additional slice for garnish
- 3 tablespoons low-fat buttermilk
- 1 tablespoon honey (optional)
- Juice of a small lime (around 1 tablespoon)
- 2 cups frozen seedless watermelon cubes

- Combine the cucumber, buttermilk, optional honey, and lime juice in a blender. Blend on high speed until entirely smooth.
- Add half of the frozen watermelon and blend until mostly smooth, pausing to stir or push down the mixture with a spatula or wooden spoon if needed for smoother blending.
- Add the remaining frozen watermelon and continue blending until smooth throughout.
- If the consistency is too thick, add 1 to 2 tablespoons of water to thin it slightly.
