Ingredients:
- 1 bunch watercress, stems trimmed and roughly chopped
- 4 fresh mint sprigs, minced (about 2 tablespoons)
- A small bunch flat-leaf parsley, finely chopped
- 1 heart of romaine lettuce, coarsely chopped
- Juice of 1 ripe lime
- 1 teaspoon sugar
- 3 tablespoons extra-virgin olive oil (approximate)
- Kosher salt and cracked black pepper
Instructions:
- In a medium salad bowl, combine the watercress, mint, parsley, and romaine.
- In a small bowl, stir the lime juice and sugar until the sugar dissolves.
- Slowly whisk in the olive oil to form a smooth emulsion.
- Pour the dressing over the greens, season with salt and pepper to taste, and toss well.
