Ingredients:

  • 1 bunch watercress, stems trimmed and roughly chopped
  • 4 fresh mint sprigs, minced (about 2 tablespoons)
  • A small bunch flat-leaf parsley, finely chopped
  • 1 heart of romaine lettuce, coarsely chopped
  • Juice of 1 ripe lime
  • 1 teaspoon sugar
  • 3 tablespoons extra-virgin olive oil (approximate)
  • Kosher salt and cracked black pepper

Instructions:

  • In a medium salad bowl, combine the watercress, mint, parsley, and romaine.
  • In a small bowl, stir the lime juice and sugar until the sugar dissolves.
  • Slowly whisk in the olive oil to form a smooth emulsion.
  • Pour the dressing over the greens, season with salt and pepper to taste, and toss well.
  • Serve immediately.
